I was looking for a 12 quart Dutch oven for chili, gumbo, soup, and roasts and such and ran across the Bayou Classic on a couple other sites.
A quick search showed that Hayneedle had it for the lowest price, then I looked and the 16 quart was even cheaper so I got it instead. When I got it it was in excellent shape, well packed from the factory, no problems at all.
It was rougher than I liked so I did some sanding on the inside of the pot and the bottom outside to make it season quicker and have a more non-stick surface. 10 minutes of flap disc sanding did the trick, then I did a thorough cleaning with hot soapy water. I started up my BBQ grill and started seasoning it, I chose Canola oil for the seasoning. 3 hours later and 8 coats on the inside and out and it was pretty nicely seasoned and really smooth on the inside.
I took it off and let it cool over night on the stove. The next day I was making gumbo so before as I prepped all the ingredients I cranked up the High output burner on the stove top and seasoned it another 4 times, resulting in a Black mirror finish now.
Just got done cooking the gumbo and didn't have any sticking issues and it worked awesome. With a little work this cast iron is very nice, haven't tried the basket but it was well made also.
Only down side I had was the lid didn't fit recessed into the pot air tight. Not a big deal for me but might be for some.
