What would be a good test for the Calphalon 3 quart sear/nonstick sauté pan and cover? The family was tired of teriyaki salmon so the answer would be a dish requiring searing and making use of the cover too and coming up with a new flavor for the salmon and all that would require 20 minutes or less. The dish I chose to make would involve searing salmon skin side down, browning onions, and yet sealing the moisture into the salmon in other words sautéing while covered. The onions came out perfectly brown and yet very moist. Not the dried out flakes from the past. The salmon skin was well crisped allowing me to peel it off prior to serving. The salmon itself was incredibly moist helped along because the seal created by the glass cover was perfect in maintaining the moisture within the fish. The result was a new family favorite: Salmon with Raspberry Wasabi Mustard. Ingredients: Raspberry Wasabi Mustard Dipping Sauce or other prepared dipping sauce from your grocer 4 teaspoons fresh dill chopped 4 tablespoons diced shallot, or onion 1 minced clove garlic Olive oil 1 lb salmon Sauté 4 tablespoons of shallots or onions in 1 tsp olive oil or more for one minute on medium, add garlic and continue cooking for one minute. Turn heat to low and place cover on pan and cook on low for 4 minutes. Remove onion/garlic mixture to small dish. With some olive oil on your hands, rubbed the oil on all sides of the salmon, sprinkle and press on the non skin side of the salmon first the chopped dill and then the onion garlic mixture. Heat the 3 quart sear/nonstick sauté pan with 1 tablespoon of canola or olive oil on medium high for three minutes or so. Place the salmon skin side down in the pan and cook for 5 minutes. Remove salmon to a plate while readjusting the remaining oil in the pan and reducing the heat to medium- medium low. Return the salmon (onion/garlic/dill mixture down) to the sauté pan and cover for 3-5 minutes depending on the thickness of the fish. Remove cover, slide spatula under the skin and remove and dispose of the skin. If the fish still needs to cook a little more you can flip it and slightly brown the side from which the skin was removed. Plate the salmon onion/garlic/dill side up, spread with the dipping sauce and listen to the rave reviews

I've been really apprehensive to use a non-stick pan since there has been so much in the media about the dangers around the non-stick surface. I received the 3qt saute' pan and have used it several times to saute' shrimp and make sauces. The clean up is easy and it seemed to cook evenly. Since I have the pan - I'll continue to use it, but my preference would be not to use a non-stick pan.

I have owned this pan for over a year and it is spectacular. So glad I spent the extra on good pans and higher quality than the similar set from Sam's Club that I sent with my x when we divorced. The nonstick surfaces of Unison are long wearing yet my son did burn an exact square of hamb into the surface when leaving it unattended as got lost in a video game! I nearly burst a gasket thinking he wrecked the pan! Of course food will stick somewhat to that square now but not terribly. I still use it as cant afford to replace my favorite pan. I wish they had an even larger of this sear pan as I like the depth. Ended up getting a huge one of the Comtemporary series if I need something bigger yet that one is almost to big. Ahhh a happy medium would be delughtful in the Unison sear or not style. Oh the handles is still rock solid on the Unison pieces as well. I bot open stock from 2 brands and 3 styles as just couldnt decide on a set that would meet my cooking & storage needs. Looking at buying the stock pot next.

We bought this because we needed a covered pan with higher sides than our other fry pans. We use this pan frequently, it has almost displaced my beloved cast iron skillet. The sear finish and size are perfect and produce fantastic results with steaks and chops when we stovetop sear then oven roast to finish all in the same pan! I don't know why anyone would need to put this in the dishwasher. It cleans up beautifully, even our sticky rubs and glazes come off with just a plastic scrubby.

I probably use this 3 nights a week. It is so versatile, the perfect size and gets an incredible sear without having to use much oil or much elbow grease to clean. Its a total necessity in the kitchen.

After 50+ years of cooking, I've found the perfect sauté pan. With only 2 of us, my arthritic hands and a love for extemporaneous cooking, this pan beats them all. Going from stove top to oven in one pan is a plus as no “flavor gems� are lost. The extra handle makes it easy for me to lift even when it’s full of dinner. Browning meats, sweating vegetables, fantastic lid and better than easy clean-up, it’s the best. I sure wish it had been available 50 years ago. AND, it’s made in America. Thank you Calphalon.

I received this saute pan as a gift and it is by far the best pan I have ever owned. Since I've been cooking for 45 years thats saying a lot. Its great for so many things, from stir fry to spagetti sauce. And clean up is so easy. No matter what I cook it wipes right out. No scrubbing ever! I f I could change anything it would only be to shorten the handle a bit.

I've had this pan for 8 months.  I've used it just about every day on the stovetop or in the oven.  I love that I can prepare something in it on the stovetop and then finish it in the oven. I also love the durability.  Easy cleanup too.  I'm leaving for an extended vacation in a few days, and I am taking this pan with me.  If I cook, I might as well enjoy the process. This pan has become an important part of the process. Well worth the $.

one little misdesign...

are the screws that attach the handle to the pan - they are on the interior of the pan and the food sticks to the screws all the time and is hard to get off. Besides that it's a great pan.
