Q: "how much of the wood chips should you use 1. with the powder that comes with the smoker 2. normal wood chips"
A: I checked with Camerons' representative, and this is what she had to say: There are aprox 30 uses out of each pint of wood chip "dust". It is recommended to use 1 -2 tbsp per cooking use. More can be used but all you are trying to get is the smoke, and when you close the top on the smoker, it all stays inside anyway. I don't think "normal wood chips" will work well in these smokers. They are really for the charcoal type of grills, and they would be too large to fit under that drip pan in the bottom of the smoker.
Q: "Can you use the stove top smoker on a gas stove. Will the heat be effected by the gas heat distribution?"
A: I have actually used this smoker myself, so I have personal experience. You certainly can use a gas stove with the unit. The heat may not be distributed evenly on the bottom of the unit, but it should not effect how the food is smoked or cooked. The food is placed on a non-stick rack above an aluminum plate (which covers the smoking chips/dust). With this set up, the smoke and heat flow freely around the food creating an even cooking and smoking atmosphere.
Q: "What is the availability, and where would you find the wood chips or dust you use with the somoker?"
A: We can certainly obtain smoking dust for you. We just have not put it on the site as yet, but I would be happy to do that for you. Which flavor/s are you interested in?
