The Difference Infra-Red Heat Makes
Infra-red heat is light we can't see but that our bodies detect as heat. Here's why it's perfect for grilling food: Meat has a moisture-saturated boundary layer. Infra-red heat is able to penetrate this boundary without displacing it. That means the moisture is retained while the meat is cooked. Convection heating dries that moisture right out. This is why a hamburger shrinks when it's cooked on a regular old grill, but not on an infra-red grill. Char-Broil grills with infra-red heat create juicier, evenly cooked food.

A: The grate is full-cover so there are no holes for the grease to drip down through, so as long as you clean that grate off once it has cooled down after each use, fire from burning grease should not be an issue.
