These chickpea waffles are a savory twist on a breakfast favorite. Using the De’Longhi Livenza Indoor Grill with Livenza Waffle Plates, you can whip up this Mediterranean-inspired dish in no time at all. Serve at breakfast or brunch, or as an elevated breakfast-for-dinner meal. Recipe yields 4 waffles.
- 1 can (15.5 ounces) garbanzo beans, drained
- 1 small onion, quartered
- 1/4 cup olive oil
- 1 large egg
- 1/4 cup chopped fresh parsley
- 3 tablespoons all-purpose flour
- 2 teaspoons ground cumin
- 1 teaspoon baking powder
- 2 garlic cloves, coarsely chopped
- 1 teaspoon kosher salt
Insert Livenza waffle plates. Press the on/off button and preheat the grill.
Combine beans, onion oil, egg, parsley, flour, cumin, baking powder, garlic, and salt in food processor; pulse until smooth.
Lightly brush waffle iron with oil. Spread about 1/3 cup to a scant 1/2 cup of the falafel mixture onto each Livenza waffle plate. Close the lid and cook until the waffles are golden and set in the center, 8 – 10 minutes. Repeat with the remaining falafel mixture.
Serve warm and top with Greek tzatziki sauce, if desired.

This warm, cheesy recipe is comfort food at its finest. With the powerful cooking technology of the De’Longhi Livenza Convection Oven, this hearty dinner takes only 35 minutes to go from prep to plate. Recipe yields 4 servings.
- Oil for frying
- 1 eggplant, about 1 1/4 pounds, cut into 1/4-inch-thick slices
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 1 cup marinara sauce
- 6 slices mozzarella cheese, sliced 1/4-inch thick
Turn function dial to bake. Set temperature to 360°F and press start to preheat oven.
Heat oil in a large skillet over medium-high heat. Add the eggplant, in batches, and cook until browned, about 8 minutes. Transfer to paper towels to drain.
Combine Parmesan and basil in a small bowl. Spoon 1/2 cup sauce on the bottom of a 1 1/2-quart baking dish. Place half of the eggplant over the sauce, overlapping the slices to fit. Top with 1/4 cup of sauce, half of the Parmesan mixture, and half of the mozzarella. Repeat layering once.
Transfer dish to oven, with rack in position 1. Bake until browned and bubbly, about 20 minutes. Let stand 10 minutes before serving.
Ham & Mushroom Pizza

The versatile convection power of the De’Longhi Livenza Convection Oven results in a pizza with a flawlessly crisp crust and perfectly melted cheese. Hungry for more? This recipe yields a double serving of dough, making it easy for you to whip up a second pizza in no time at all. Recipe yields 4 servings.
- 3 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) quick-rise yeast
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 cup very warm water (115ºF – 120ºF)
- 4 tablespoons olive oil
- 1 cup sliced shiitake mushrooms
- 1/2 cup marinara sauce
- 1/2 cup coarsely chopped deli ham
- 1/4 cup coarsely chopped Kalamata olives
- 1 1/4 cups shredded mozzarella cheese
Combine the flour, yeast, sugar, and salt in a large bowl. Add the water and 3 tablespoons olive oil, stirring until a soft dough forms. Turn the dough onto a lightly floured surface. Knead for 10 minutes. Cover and let rest for 15 minutes.
Meanwhile, heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the mushrooms and cook until browned, about 8 minutes. Remove from heat and set aside.
Divide the dough in half. Wrap and freeze one half to use another time.
Turn out the dough onto a lightly floured surface. With lightly floured hands, shape the dough into a disk. Gently pull and stretch the dough into a 10-inch round. Transfer the dough to the pizza pan, gently pulling the dough back to the edges of the pan. Spread sauce over the dough. Scatter the mushrooms, ham, and olives over the sauce.
Turn the oven’s function dial to pizza. No preheating is necessary. Select the 12-inch diameter size and press start. Place the pan on the rack in position 1 and bake until the crust is golden, about 17 minutes. Top with mozzarella and continue to bake until the cheese is melted, 3 – 5 minutes longer.
